I am hoping to use software to take values from a Modbus speaker and set-up a server on the localhost which publishes those values to a different address in real time.

I have a coffee roaster which speaks to proprietary software using modbus. (Probatone 12). The roaster is simply publishing temperature readings on a 1s basis.

I want to use another piece of software which is designed for another machine which also uses modbus but published the data to different addresses.

So what I would like is something which is able to "move" the data from one address to another.

Any ideas?
